1 cup milk or milk substitute
1 cup flour
butter or other oil for pan
toppings (butter, powdered sugar and lemon juice, jam, nutella, etc...)
Preheat oven to 425F.
Beat eggs well. Mix in milk. Mix in flour, stirring well, though don't panic if there are a few lumps left.
Place a 1/2 tb to 1 tb of butter in a cast iron skillet or ~9x9 casserole dish and put in oven until butter is melted and hot hot hot.
Swirl butter around skillet or dish and add batter all at once. Batter should sizzle when it hits the pan. Place back in oven and cook for 20 minutes or until golden on top. Try not to peek for the first 20 minutes.
The dutch baby will rise to great heights but will quickly fall once out of the oven. Spread butter and top with topping of choice. Also good for breakfast.
