Tofu tortilla casserole
Feeds 6-8 people.
1 T oil
1 med onion, chopped
2 cloves garlic, minced
1 lb tofu, crumbled
1 28 oz can tomatoes, chopped with liquid
3 T chili powder
1 ½ t cumin
1 t salt
12 corn tortillas, quartered
½ lb (2 ½ c) grated cheddar
1 ½ green onions, chopped
1 c sliced black olives
2 c cottage cheese
Sauté onion, garlic and tofu until soft and tofu is dry and beginning to brown. Add tomatoes, chili powder, cumin and salt and simmer 20 minutes. Spread ½ c sauce on bottom of 9X13 pan. Cover with ½ the tortillas, cheddar, cottage cheese, green onions and olives. Pour on ½ remaining sauce. Repeat putting the cheddar, onions and olives on top. Bake at 350 degrees for 20-30 minutes.
