Surinamese Roti
Ingredients:
- potatoes
- onions
- garlic
- tomatoes
- green beans
- eggs
- tempeh
- tofu
- cucumber
For the roti:
- wheat flour
- oil
- yellow lentils
Make the roti
Put the flour in a bowl, make a well in the middle, and add the oil, baking powder, salt and lukewarm water Mix into a sticky mass. Add flour and knead until the stickiness goes away. Let dough sit for 10 minutes.
Wash lentils, and in pan with enough water to barely cover the lentils add a little garlic, piece of onion, pepper, salt and sugar. Cook gently until liquid has evaporated, cool.
Make dough balls the size of a large egg then make a well in the center of the balls. Fill with 1 tablespoon of lentils, fold the dough and with your palm flatten the ball. Roll the ball flat and thin. Heat a skillet to medium (maybe medium high), rub with oil. Fry the dough and coat lightly with oil on both sides.

Make the potatoes
Cook some onions and garlic, then add curry type spices. Chop the potatoes into small cubes and add them to the mix. Cook till done, may need some water.
Make the green beans
Clean and cut the ends. Fry these with tomatoes and sambal.
The eggs
Hard boil the eggs and remove the shell. You can cook them a little more in a sambalish tomatoe type sauce, or just add them to the dish.
Tofu/Tempeh
Cut the tofu and squeeze the water out. Marinate the tempeh and tofu in sambal and maybe mixture. Fry these lightly in a pan with some oil.
